Ricotta Fritters
Time: 20 minutes
Ingredients
- 4 qts ricotta cheese
- 1 qt parmesan cheese grated
- 1 qt bread soaked w/ whole milk
- 1 cup chopped parsley
- 1 cup pickled cherry peppers minced
- 4 cloves garlic minced
- 6 whole eggs
- 1 qt castelvetrano olives chopped fine
- 2 T lemon zest
- 1 T black pepper
- 2 T salt
Directions
1. Mix all ingredients together until well combined
2. Form into 1 inch balls
3. Dredge in Flour/egg/breadcrumbs w/ 50% panko
4. Fry until golden brown
